The word ‘Fillo’ is derived from the Greek word φύλλο which is spelt with two L’s meaning “leaf”, as compared to spelling it φίλο with one L which means “friend”.
When pronounced with one L, “Filo” is pronounced FI-LO, like SI-LO or MI-LO. With double L, Fillo is pronounced as FEE-LO, WILLOW, PILLOW.
For these reasons, we spell the word Fillo Pastry with two L’s.
