Andrea’s family regularly gathers to cook and eat together, whether it’s for a special family celebration or just to enjoy each other’s company for the day. What a joy it was to spend the day with three generations of the family as they prepared a variation of Kolokithopites. Kolokotes, or Kolokopites are Cypriot pumpkin pies traditionally made with a thick style pastry in a semi-circle shape. Today, Andrea’s family are making them with our family’s Fillo Pastry in a spiral shape, using fresh pumpkin from Pappou Savva’s garden. Watch along to see how they make them.

Four Cheese Tiropita
Tiropita is a traditional Greek pie made with cheese and Fillo Pastry. This delicious savoury cheese pie is a wonderful lunch or dinner pie recipe. We’ve used a combination of four cheeses for extra flavour. We finish the pie off with soda water for an extra moist pie and extra crispy Fillo Pastry pie top.
Titsiropita - Pork Belly and Halloumi Pita
Panayiota and Savvas have taken inspiration from a traditional Cypriot pie or pita recipe to create what they call ‘Titsiropita’ – where layers of Fillo Pastry are brushed with pork belly lard and filled with crispy pork belly, halloumi cheese, caramelised onions and thyme. It is a wonderful pita in a spiral formation using store bought Fillo Pastry.
Pumpkin Soufra
This delicious savoury pumpkin soufra is a wonderful lunch or dinner recipe for Winter. The classic combination of pumpkin and feta cheese in Fillo Pastry works beautifully with the cheese custard to create a truly wonderful dish.
