Andrea's Spiral Kolokithopites - Cypriot Pumpkin Pies

Andrea’s family regularly gathers to cook and eat together, whether it’s for a special family celebration or just to enjoy each other’s company for the day. What a joy it was to spend the day with three generations of the family as they prepared a variation of Kolokithopites. Kolokotes, or Kolokopites are Cypriot pumpkin pies traditionally made with a thick style pastry in a semi-circle shape. Today, Andrea’s family are making them with our family’s Fillo Pastry in a spiral shape, using fresh pumpkin from Pappou Savva’s garden. Watch along to see how they make them.

Khalil from Sydney’s Ibrahim Pastry is a wealth of knowledge when it comes to cooking with our family’s pastry. He is renowned for the incredible delicacies he creates for his cake shop, and we love his amazing energy in the kitchen when he is cooking. Panayiota and Savvas have taken inspiration from a traditional Cypriot pie or pita recipe to create what they call ‘Titsiropita’ – where layers of Fillo Pastry are brushed with pork belly lard and filled with crispy pork belly, halloumi cheese, caramelised onions and thyme. It is a wonderful pita in a spiral formation using store bought Fillo Pastry.
